Healthy Chocolate Pie
This raw pie is so satisfying at the end of the day. A combination of dates, figs, nuts and cocoa powder make a very rich dessert!
1 cup raw almonds
1 cup Medjool dates, pits removed
4 large dried figs
1/2 teaspoon salt
1 Tablespoons ground flax
1 Tablespoon tahini
1 Tablespoon unsweetened cocoa powder
2/3 cup cashews, can be lightly salted
2/3 cup almonds
1/3 cup cocoa powder
2-3 Tablespoons pure maple syrup
Filtered water for thinning, 3-4 tablespoons
To the processor add the almonds and process to a fine powder. Then add dates, figs, flax, salt, cocoa powder and tahini and process to a dough. Add cashews and process to mix, leaving visible pieces of cashews.
Grease a glass pie plate with a bit of olive oil. Press dough mixture evenly into plate.
To make the filling add almonds to the small bowl attachment of food processor and process until you have almost a nut butter. This may take up to 6 minutes. Add cocoa powder and 2 tablespoons of maple syrup and continue processing. When mixture becomes too thick gradually add small amounts of water one tablespoon at a time to loosen things up. I added 4 tablespoons of water. Taste for sweetness and add more maple syrup if desired.
Spread the frosting evenly over the crust. Refrigerate until set, about 30 minutes. Cut into thin slices and top with berries if desired.
