Healthy Peanut Butter Cups
Using just a few simple ingredients create a healthy, delicious dessert!

Ingredients
For the bottom layer
- 1/3 cup peanut or almond butter creamy
- 2.5 tbsp coconut oil melted
- 1 tsp vanilla extract
- 3 tbsp cocoa powder unsweetened
- 1.5 tbsp Maple syrup
For the top layer
- 1/2 cup peanut or almond butter creamy
- 2 tbsp coconut oil melted
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 pinch sea salt coarse
Instructions
- Line a mini muffin tin with 12 muffin liners or standard size with 6 . Spray with coconut oil cooking spray and set aside.
- In a medium bowl, stir all ingredients for the bottom layer (chocolate) together until smooth. Set aside.
- In another medium bowl, stir all ingredients for the top layer (peanut butter) together until smooth. Set aside
- If using mini muffin pan scoop a heaping 1/2 tablespoon of the chocolate layer into each muffin cup. For standard size muffin pan place 1 full tablespoon in each cup. Repeat until you’ve filled around 12 mini (or 6 large) cups. Then, pick up the entire muffin pan and shake and tap until the layer is set evenly.
- Repeat the same thing with the peanut butter layer, plopping around 1/2 or 1 tablespoon on top of the chocolate layer. Pick up the entire muffin pan one last time and shake and tap until your cups are even.
- Finally, sprinkle each cup with some Himalayan sea salt.Place muffin tin in the freezer for 30 minutes or until firm. Enjoy!
