Favorite Summer Salad
Add peaches and cherry tomatoes to spruce up your salad!
- 5 cups mixed greens
- 1 peach sliced
- 2/3 cup cherry tomatoes halved
- 1/2 cup red onions thinly sliced
- 1/3 cup vegan cheese
- 3 tablespoons balsamic vinaigrette
- 1 pinch sea salt
- 1/2 teaspoon pepper
- Preheat oven to 400
- Place greens in a large salad bowl and season lightly with sea salt and fresh pepper.
- Add vegan cheese in dollops on top of greens
- Put peach slices and cherry tomatoes in a glass pie dish or similar dish
- Drizzle with about 1 tablespoon olive oli and season lightly with sea salt and pepper
- Roast in oven for 15 minutes
- Remove from oven and let cool. Then add to bowl of greens
- Drizzle balsamic vinairgrette over salad and lightly toss.
