When you're in a hurry or just too tired to cook anything elaborate (most of the time) try this simple salmon dinner. If you've frozen some pesto ahead of time and purchased some salmon filets you don't even have to go shopping!
2 frozen salmon portions
1 bag frozen cauliflower rice
1/2 cup frozen peas
Sea salt and black pepper
If you're really pressed for time you can rinse, pat dry, season with salt and pepper, and pan-fry a frozen salmon filet for a few minutes on each side.
In a separate pan, heat cauliflower rice and peas in a little oil until warm. Serve salmon over the cauliflower-pea blend and finish with pesto.
