Vegan Ricotta Cheese
This spread adds terrific flavor to everything from salads to pizza to wraps. A personal favorite!
- 1 block Organic Firm Tofu pressed
- 1 cup Cashews soaked for at least 4 hours (or pour boiling water over them and let them sit for 10-12 minutes, or cover them in water and microwave them for 75 seconds)
- 2 tablespoons Nutritional Yeast
- 2 cloves garlic
- Juice of 1 Lemon
- Zest on 1 lemon
- 1 tsp Salt
- Black Pepper to taste
- Optional: 2 tsp Italian Seasoning or other spices of choice
- Add all ingredients to a Food Processor and pulse until well-combined; the final mixture should be thick, fluffy, and maybe a bit chunky.
