Vegan Ricotta Cheese

Vegan Ricotta Cheese

This spread adds terrific flavor to everything from salads to pizza to wraps.  A personal favorite!

Ingredients

1 block Organic Firm Tofu, pressed

1 cup Cashews, soaked for at least 4 hours (or pour boiling water over them and let them sit for 10-12 minutes, or cover them in water and microwave them for 75 seconds)

2 tablespoons Nutritional Yeast

2 cloves garlic

Juice of 1 Lemon

Zest on 1 lemon

1 tsp Salt

Black Pepper, to taste

Optional: 2 tsp Italian Seasoning or other spices of choice

Instructions

Add all ingredients to a Food Processor and pulse until well-combined; the final mixture should be thick, fluffy, and maybe a bit chunky.
