Vegan Ricotta Cheese

Vegan Ricotta Cheese

This spread adds terrific flavor to everything from salads to pizza to wraps.  A personal favorite!

Ingredients

  • 1 block Organic Firm Tofu pressed
  • 1 cup Cashews soaked for at least 4 hours (or pour boiling water over them and let them sit for 10-12 minutes, or cover them in water and microwave them for 75 seconds)
  • 2 tablespoons Nutritional Yeast
  • 2 cloves garlic
  • Juice of 1 Lemon
  • Zest on 1 lemon
  • 1 tsp Salt
  • Black Pepper to taste
  • Optional: 2 tsp Italian Seasoning or other spices of choice

Instructions

  • Add all ingredients to a Food Processor and pulse until well-combined; the final mixture should be thick, fluffy, and maybe a bit chunky.
