At some point every day the question comes up: “What’s for dinner?”
If you’ve planned ahead at the start of the week, you’ll likely be prepared with the answer. That’s a good feeling! It’s like having all your laundry clean and folded or a full tank of gas. Just knowing what’s on the menu is very liberating.
For many of us, it can be difficult at the end of a long day to get excited about preparing a meal. Here are a few of our current Fall favorites to help get you started. Chili Soup, Asian Salmon Bowl, Bean Burritos and Stuffed Acorn Squash are all easy to make, all healthy and all delicious. Hope you enjoy!
A little bit sweet and a little bit spicy, this soup is the perfect combination of flavors to satisfy your taste buds and your craving for something warm and comforting! Serve with a large salad and a piece of whole-grain bread for a delicious, satisfying meal.
Asian Salmon Bowl
A nice alternative to a traditional salmon dinner. The wasabi vinaigrette is tangy with the just the right amount of spicy – it’s almost addicting! You can purchase wasabi powder at many stores; I found mine at Whole Foods. The kids will enjoy this meal too!
Black Bean and Sweet Potato Burrito
Who doesn’t love a nice big, warm burrito? Be sure to use whole wheat or soft corn tortillas with no mysterious ingredients.
Stuffed Acorn Squash
The combination of sage, apples, squash and sausage is wonderful in this recipe!
