Favorite Summer Salad
Add peaches and cherry tomatoes to spruce up your salad!
- 5 cups mixed greens
- 1 peach sliced
- 2/3 cup cherry tomatoes halved
- 1/2 cup red onions thinly sliced
- 1/3 cup vegan cheese
- 3 tablespoons balsamic vinaigrette
- 1 pinch sea salt
- 1/2 teaspoon pepper
Preheat oven to 400
Place greens in a large salad bowl and season lightly with sea salt and fresh pepper.
Add vegan cheese in dollops on top of greens
Put peach slices and cherry tomatoes in a glass pie dish or similar dish
Drizzle with about 1 tablespoon olive oli and season lightly with sea salt and pepper
Roast in oven for 15 minutes
Remove from oven and let cool. Then add to bowl of greens
Drizzle balsamic vinairgrette over salad and lightly toss.
