Favorite Summer Salad

Add peaches and cherry tomatoes to spruce up your salad!


  • 5 cups mixed greens
  • 1 peach sliced
  • 2/3 cup cherry tomatoes halved
  • 1/2 cup red onions thinly sliced
  • 1/3 cup vegan cheese
  • 3 tablespoons balsamic vinaigrette
  • 1 pinch sea salt
  • 1/2 teaspoon pepper


  • Preheat oven to 400
  • Place greens in a large salad bowl and season lightly with sea salt and fresh pepper.
  • Add vegan cheese in dollops on top of greens
  • Put peach slices and cherry tomatoes in a glass pie dish or similar dish
  • Drizzle with about 1 tablespoon olive oli and season lightly with sea salt and pepper
  • Roast in oven for 15 minutes
  • Remove from oven and let cool. Then add to bowl of greens
  • Drizzle balsamic vinairgrette over salad and lightly toss.
